We created a demo mobile version of ResourceShelf in about 2 minutes. xFruits offers a NUMBER of other tools. For example:
RSS to PDF, Email to RSS, RSS to Email (basically create a newsletter with your feeds), RSS to OPML, RSS to Web, RSS to Mobile, OPML to Mobile. Learn more via the xFruits blog.

Another excellent tool utilizing RSS to create mobile friendly sites content comes from WinkSite. They also offer a directory of mobile sites created using their technology.
